老闆去大吉嶺買到好茶還未來到﹙非常期待﹚,不如同大家分享下 這次去大吉嶺茶園認識到的大吉嶺茶的製作過程吧。

當茶葉採摘下來之後,就會經過「凋萎」﹙withering﹚過程︰即讓茶葉放上一夜,讓它們自行發酵。

一夜之後,通常茶葉顏色會由鮮綠色變成 啡色,但當中會有些沒有變色的樹葉——通常是長得過大過老,或是太硬的茶葉,它們要在「凋萎」之後才會被發現的。於是,這時就要靠有經驗的製茶工人,將這些情況不理想的茶葉,用手挑出來。

對極品級數的大吉嶺茶來說,這是非常重要的製茶步驟,對茶的品質有莫大的影响。通常比較著名、出產高級大吉嶺茶的茶園,都非常注重這個篩選步驟;而普通級別的茶園,則較少理,因為成本實在高昂。但是,茶葉質量的高低差別所在,往往就在於這些茶客們看不見的精細過程裏。

After the leaves are plucked, next step is withering process.
Let the leaves dry with wind and stay over night for self-fermentation.
After over night, leaves are changed to brown color.
However there are many of still green leaves.
Many of these green leaves are hard, over grown leaves.
Even the leaf size is small, if the leaf is hard, the leaf can not be used.
So these hard leaves need to be removed one by one by hand after wither process.
(Hard leaves can not be defined before withering process)

 

This is very important process for keeping high quality tea.
But this is very bothersome and time consuming process.
So good quality gardens always do this process seriously. But not so good garden will take this roughly.
This process would make the gap in quality among the Darjeeling tea gardens.
